Limoncello Lush

A cool blog called The Cocktail Chronicles is soliciting summer drink ideas, and I thought I’d submit our Limoncello Lush, which I first wrote about earlier in the season. I freely admit I’m no cocktail expert, but I think this sunshine-yellow libation—which Brian and I created to serve at a panino party—meets the criteria for what a summer cocktail should be. It’s refreshing and super-lemony with sparkle from the prosecco. Plus it has a big ol’ kick from all that vodka. Much like the perfect summer beach read, this drink is not particularly challenging or complex—just supremely pleasurable. And that's good enough for me.

LIMONCELLO LUSH

2 oz. limoncello
1 oz. vodka
1 oz. lemon juice
Prosecco

Combine Limoncello, vodka, lemon juice, and ice in a cocktail shaker and shake well. Strain over ice into an old-fashioned glass. Top with Prosecco, stir gently, and garnish with a lemon wheel.

I was so enamored with the kabocha and pork recipe that I totally missed this one the first time around!

What a great recipe, and it has my beloved prosecco in it too.

You have inspired me to make my "homebrew" limoncello. I better start it this weekend if I want to have it ready by Xmas.

That's ambitious! I bet it's so much more delicious than the store-bought kind, though. --Sarah
