Buddha's Hand Citron






What it is: a fragrant citrus fruit with an ancient history. According to Wikipedia (I know, I know, not the most
reliable source) the Buddha's Hand Citron originated in India and is likely the first citrus variety to be introduced to Europe.

The seedless fruit has very little pulp and juice; today, it's grown mainly for its peel, which is candied commerically. Home cooks can use its aromatic zest pretty much like any other citrus zest. You can also candy the peel, of course, and make marmalade with it. Or maybe you'll want to take advantage of what is arguably the Buddha's Hand's greatest asset—its looks—and use it as a lovely table decoration.
