- 1/2 cup balsamic vinegar (120ml)
- 2 tbsp keto sweetener (erythritol or allulose)
METHOD:

- Season chicken breasts with olive oil, dried herbs, salt, and pepper.

- Heat skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden.
- Remove chicken and set aside.
- Add tomatoes, onion, and garlic to the same skillet.

- Make the glaze: Combine vinegar and sweetener in saucepan, bring to boil, reduce heat and simmer for 10-15 minutes until syrupy.
- Pour half the glaze over vegetables.

- Return chicken to skillet.
- Top with mozzarella.

- Optional: Broil for 2-3 minutes for golden cheese.
