EQUIPMENT NEEDED

  • Meat thermometer

INGREDIENTS
For the Steak:
  • 2 filet mignon steaks (150-170g/5-6oz each)
  • 2 tbsp butter (30g)
  • 1 tbsp olive oil (15ml)
  • 1 tsp sea salt (5g)
  • 1/2 tsp black pepper (2.5g)
  • 1 tsp garlic powder (5g)
  • 1 sprig fresh rosemary (or 1/2 tsp dried)
For the Shrimp:
  • 10-12 large shrimp, peeled and deveined
  • 2 tbsp butter (30g)
  • 1/2 tsp paprika (2.5g)
  • 1/2 tsp garlic powder (2.5g)
  • Salt and pepper to taste

METHOD
  1. Remove steaks from refrigerator 30 minutes before cooking
  2. Pat steaks and shrimp completely dry with paper towels
  3. Season steaks generously with salt, pepper, and garlic powder
  4. Season shrimp with paprika, garlic powder, salt, and pepper
  5. Heat cast iron skillet over high heat until smoking
  6. Add olive oil to pan, swirl to coat
  7. Place steaks in pan, cook 3-4 minutes per side for medium-rare
  8. Add 2 tbsp butter and rosemary, baste steaks for 1-2 minutes
  9. Remove steaks when internal temperature reaches 130°F/54°C
  10. Rest steaks under foil tent
  11. In same pan, add remaining butter and cook shrimp 2-3 minutes per side until pink

CRUCIAL TIPS
  • Never move steaks during first 3 minutes of searing
  • Shrimp are done when they form a ‘C‘ shape – if they curl into an ‘O‘, they’re overcooked
  • Let steaks rest for at least 5 minutes before cutting
  • Use residual pan heat for shrimp to prevent overcooking
