Ingredients

  • 1 medium head of cauliflower, grated or processed into rice
  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into pieces
  • 8 ounces chorizo sausage, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads (optional)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Prepare the Cauliflower Rice: Remove the leaves from the cauliflower and cut it into florets. Use a food processor to pulse the florets until they resemble rice grains.
  2. Cook the Chicken: In a large skillet or paella pan, heat olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken and set aside.
  3. Sauté Chorizo and Vegetables: In the same pan, add the chorizo and cook until slightly crispy. Add the onion, garlic, and bell pepper, and sauté until softened.
  4. Combine Ingredients: Return the chicken to the pan. Stir in the smoked paprika, saffron (if using), and cauliflower rice. Pour in the chicken broth and season with salt and pepper.
  5. Simmer: Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 15-20 minutes, or until the cauliflower is tender and has absorbed the flavors.
  6. Serve: Garnish with chopped parsley and serve with lemon wedges on the side.
