This keto-friendly blueberry Danish features a rich almond flour pastry filled with a luscious blueberry mixture. It’s easy to prepare and takes about 30 minutes from start to finish, serving 8 pieces.

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or sweetener of choice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Prep the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Pastry Dough: In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Add melted butter, eggs, and vanilla extract. Mix until a dough forms.
  3. Prepare the Blueberry Filling: In a saucepan, combine blueberries, lemon juice, and cornstarch (if using) over medium heat. Cook for about 5-7 minutes until the blueberries are softened and juicy. Remove from heat and let it cool.
