INGREDIENTS:
  • 2 ribeye steaks (8 oz each, 1-1.5″ thick)
  • 8 oz baby bella mushrooms, sliced
  • 4 tbsp grass-fed butter, divided
  • 1 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • Optional: 1 tbsp fresh parsley, chopped
METHOD:
  1. Take steaks out 30-60 minutes before cooking. Pat dry with paper towels and season generously with salt and pepper.
  2. Heat skillet over medium-high heat until smoking hot. Add 1 tbsp each butter and oil.
  3. Place steaks in pan. Sear 3-4 minutes per side for medium-rare.
  4. Remove steaks to a plate to rest.
  5. Lower heat to medium. Add remaining butter and mushrooms to the same pan.
  6. Sauté mushrooms 4-5 minutes until golden brown.

  9. Return steaks to pan, spoon mushroom butter over them.
