EQUIPMENT NEEDED:
- 10-12 inch cast iron skillet (or heavy-bottomed steel pan)
- Tongs
- Meat thermometer
- Sharp knife
- Cutting board

INGREDIENTS:
- 2 ribeye steaks (8 oz each, 1-1.5″ thick)
- 8 oz baby bella mushrooms, sliced
- 4 tbsp grass-fed butter, divided
- 1 tbsp olive oil
- 2-3 garlic cloves, minced
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Optional: 1 tbsp fresh parsley, chopped
METHOD:
- Take steaks out 30-60 minutes before cooking. Pat dry with paper towels and season generously with salt and pepper.
- Heat skillet over medium-high heat until smoking hot. Add 1 tbsp each butter and oil.
- Place steaks in pan. Sear 3-4 minutes per side for medium-rare.
- Remove steaks to a plate to rest.
- Lower heat to medium. Add remaining butter and mushrooms to the same pan.
- Sauté mushrooms 4-5 minutes until golden brown.
- Add garlic and thyme. Cook 30 seconds until fragrant.
- Return steaks to pan, spoon mushroom butter over them.
- Cook 1-2 minutes more until steak reaches desired temp (130-135°F for medium-rare).

CRUCIAL TIPS:
- Don’t move steaks while searing – let the crust form
- Use room temperature steaks for even cooking
- Let steaks rest 5-10 minutes before cutting
- Don’t overcrowd mushrooms or they’ll steam instead of brown
STORAGE & SCALING:
- Keeps 3 days refrigerated
- Reheat gently in pan over low heat
- Recipe doubles easily for 4 servings
- Use a larger pan when scaling up
VARIATIONS:
- Add 1⁄4 cup heavy cream to mushrooms for sauce
- Swap thyme for rosemary or sage
- Try with NY strip or tenderloin steaks
- Add red wine or beef broth to mushrooms
