Creamy Keto Tres Leches Cake That Melts in Your Mouth

I was skeptical that a keto tres leches cake would work without real milk soaked into the crumb. The three milks sink in overnight and the cake cuts like custard the next morning.

With its rich, moist layers soaked in three types of cream, this recipe is simple to follow and exceedingly satisfying for anyone seeking a flavorful keto treat.

Delicious Keto Tres Leches Cake Recipe

This keto tres leches cake keeps for three days on the counter in a covered container. I always make a second one when I know people are coming over because the first goes fast.

Ingredients

  • 1 cup almond flour
  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup unsweetened coconut milk
  • 1 teaspoon vanilla extract
  • 3/4 cup heavy cream
  • 3/4 cup unsweetened coconut milk (for soaking)
  • 3/4 cup unsweetened evaporated milk alternative
  • Toppings: whipped cream and fresh berries (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Prepare the Batter: In a bowl, mix almond flour, erythritol, baking powder, and salt. In another bowl, whisk together eggs, coconut milk, and vanilla extract. Combine the wet and dry ingredients until well mixed.
  3. Bake the Cake: Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
  4. Make the Cream Mixture: In a separate bowl, whisk together the heavy cream, coconut milk, and evaporated milk alternative.
  5. Soak the Cake: Once the cake is cool, poke holes all over the top with a skewer or fork. Slowly pour the cream mixture over the cake, allowing it to soak in.
  6. Chill and Serve: Refrigerate the cake for at least 2 hours before serving. For the final touch, top with whipped cream and fresh berries if desired.
